Roasted Mustard Potatoes

  • 4 tablespoon dijon mustard
  • 2 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/8 teaspoon cayenne
  • 16 baby red potatoes

Step 1

Spray a roasting pan to coat with oil. Put the mustard, paprika, cumin,
chili powder, and pepper in a large bowl. Whisk to blend. Prick potatoes
several times with tines of a fork and add them to bowl. Toss to coat
potatoes evenly. Pour coated potatoes into prepared roasting pan, leaving a
little space between them. Bake about 45 minutes to one hour, until
potatoes are fork-tender, at 400 °F.
