Ingredients

  • 4 Large Tomatoes, peeled and sliced
  • 10 Fresh Basil Leaves, chopped
  • 1/2 Cup Green Onion, chopped
  • 1 9" Pie Shell, pre-baked
  • 1 Cup Mozzarella Cheese, shredded
  • 1 Cup Cheddar Cheese, shredded
  • 1 Cup Mayonnaise
  • Salt and Pepper

Step 1

Preheat oven to 350 degrees. Place peeled and sliced tomatoes in a colander in the sink. Sprinkle with salt and allow to drain for 10 minutes. Layer the tomato slices, basil and onions in the pie shell. Season with salt and pepper. Combine the shredded cheeses and mayonnaise. Spread this mixture on top of the tomatoes and bake for 30 minutes or until lightly browned. Cut into slices and serve.
