Ingredients
- 2 (6 oz) jars marinated artichoke hearts
- 1 sm. onion, finely chopped
- 1 clove garlic, minced
- 4 eggs
- 1/4 c. fine dry bread crumbs
- 1/4 t. salt
- 1/8 t. each - pepper, oregano and Tabasco
- 1/2 lb. extra sharp cheddar cheese, shredded
- 2 T. minced parsley

Step 1
Drain marinade from 1 jar of the artichokes into a skillet. Drain the other jar into the sink (do not save). Chop all the artichokes and set aside. Add onion and garlic to skillet and saute until onion is limp, about 5 minutes. In a bowl, beat eggs with a fork. Add the crumbs, salt, pepper, oregano and Tabasco. Stir in the cheese, parsley, artichokes and onion mixture. Spoon into greased 7x11 baking pan (or 9x9). Bake at 325 degrees for about 30 - 35 minutes, or until set when lightly touched. Let cool in pan, then cut into 1" squares. Serve cold or reheat in the pan in a 325 degree over for 10 minutes.
