Broccoli Soup

Ingredients
- 1-1/2 to 3 lbs. fresh broccoli
- 5 c. chicken stock (broth)
- 1/4 c. cutter
- 2 T. chopped onion
- 3 celery stalks, minced
- 1/4 c. flour
- 2 c. heavy cream or haf and half, scalded
- 1/4 c. nutmeg
- salt, pepper and parmesan cheese

Step 1
Wash broccoli and cut off flowerettes, set aside, Combine broccoli and broth and bring to boil. Simmer 15 minutes. Separate stems from broth. Save broth. Put 1 cup broth and stems in blender, puree. Place flowerettes in rest of chicken broth and bring to boil. Simmer 5 to 7 minutes. Melt butter in saucepan. Saute' onions and celery 5 minutes. Stir in flour, cook 3 to 4 minutes, then add broth and flowerettes. Bring to boiling point. Add puree and cream, bring to boil and add nutmeg, salt, pepper to taste. Remove from heat. Serve with cheese.
