Cajun Fish Fillets

Ingredients
- 1/3 cup all-purpose flour
- 1 Tbsp paprika
- 2 tsp chili powder
- 1/2 tsp freshly ground black pepper
- 4 thin, skinless white fish fillets, such as sole, cod or flounder (6 oz each)
- 1 Tbsp vegetable oil

Preparation
Step 1
On a sheet of waxed paper, combine flour, paprika, chili powder, and pepper. Mix well.
Dredge fish in flour mixture, shaking off excess; turning to coat. In a large nonstick skillet, heat oil over med-high heat.
Add fish to skillet. Cook fish, turning once, until fish becomes opaque and flakes easily when tested with a fork, about 5 min.
Serve immediately.
