Technique Roaster Summer Ale Chicken (Beer Can Chicken)

  • 1 4# whole chicken
  • 1 T vegetable oil
  • 2 T brown sugar
  • 3 T paprika
  • 1 t dried mustard
  • 1 t chili powder
  • 1 T salt
  • 1 t black pepper
  • 2 bottles summer ale
  • 3 onions sliced
  • 1 bay leaf
  • 4 sprigs fresh thyme



Step 1

Rinse chicken with water removing giblets. Brush chicken with vegetable oil. Combine brown sugar, paprika, mustard powder, chili powder, salt and pepper. Rub this mixture all over chicken. Place chicken on roaster rack in flame casserole and pour 1 bottle of beer into center cup of chicken roaster dish. Season onions with salt and pepper and place them around the chicken in roaster. Pour remaining beer over onions. Roast in oven at 350 75 minutes.
