Ingredients

    tbsp unsalted butter, room temperature ++

    c flour ++

  • ½

    tsp baking powder

  • ¼

    tsp baking soda

  • coarse salt

  • ¾

    c + 2 tbsp sugar

  • 1

    lg egg

  • ½

    c buttermilk

  • 2

    ripe med plums thinly sliced

Directions

Preheat oven 59 375 butter 8" ovenproof skillet or cake pan. Dust with flour, tapping out excess Whisk together flour, baking powder, baking soda and 1/2 tsp salt. Beat butter and 3/4 c sugar with a mixer on medium speed until pale and fluffy. Beat in egg. Add flour mixture in 3 additions, alternating with buttermilk. Pour batter into prepared skillet, and smooth top with offset spatula. Pan plums on top and sprinkle with remaining 2 tbsp sugar. Bake until golden brown and pick inserted into centre comes out clea. 35-40 minutes. Let cool slightly.
