Baked Fish with Wild Rice

Ingredients

  • 2 1/3 cups water
  • 1 pkg (6oz) long grain and wild rice
  • 2 tblsp butter
  • Fish fillets
  • Salt and pepper
  • 1/4 cup butter
  • 1 box frozen chopped spinach or broccoli
  • 1 env. of Hollandaise or cheese sauce mix

Preparation

Step 1

Combine water, contents of rice and seasoning packets and 2 tblsp butter in large saucepan. Bring to boil. Reduce heat, cover and simmer 20 minutes. While rice is cooking, season fish with salt and pepper. Arrange in single layer in lightly buttered baking dish. Pour melted butter evenly over fish. Bake in 350 preheated oven for 20 minutes or until fish flakes easily with fork.Stir broccoli or spinach into rice. Cover and continue to simmer until all water is absorbed, about 5 minutes. Prepare sauce mix according to package directions. Transfer fish to serving platter. spoon sauce over top. Serve with rice.
