Grits & Sausage Casserole

Ingredients

  • 2 cups of water
  • 1/2 teaspoon salt
  • 1/2 cup quick grits
  • 4 cups cheddar cheese
  • 4 beaten eggs
  • 1 cup of milk
  • 1/2 teaspoon of dried thyme
  • 1/8 teaspoon of garlic salt
  • 2 pounds of cooked mild sausage

Preparation

Step 1

Bring water and salt to a boil. Stir in grits.
Return to a boil and reduce heat. Cook 4 minutes.
Combine grits and cheese in a large mixing bowl; stir until cheese is melted.
Combine eggs, milk, thyme and garlic salt; mix well.
Add a small amount of grits to the egg mixture; stir well.
Stir egg mixture into grits mixture. Add sausage and stir.
Put in a 13x9 baking dish. Cover and refrigerate overnight.
Remove from refrigerator and let stand for 15 minutes. Bake at 350 degrees for 50 to 55 minutes.
