Ingredients
- 1 - warm up a cast iron frying pan at 35 to 40% heat, add 1-2 Tbsp of lard.
- 2 – in a bowl mix equal amounts of flour & crushed corn flakes. (11/2 cups of each). Add 1 tsp of seasoning salt.
- 3 – in a second bowl add 3 eggs & a “glug” of milk, mix well.
- 4 – dip fish into “flour” first (both sides) next into egg mixture & then back into flour mixture (both sides)

5 – out into warm frying pan & cook until stabbed easily with a fork, add 1 tsp of butter & turn & brown other side.
