Ratatouille

I made this for the party after our wedding in August, 1979, with our own fresh garden vegetables. It makes a delicious summer dish!

Ingredients
- 2 large onions, sliced
- 2 garlic cloves, minced
- 1 eggplant, peeled and cut into 1/2 - 1 inch cubes
- 6 medium zucchini thickly sliced
- 2 green or red peppers seeded and cut into chunks
- 4 large tomatoes peeled and chunked
- 1 tsp. basil
- 1/2 C. minced parsley
- 4 T. olive oil
- parsley

Preparation
Step 1
Place zucchini and eggplant into colander to drain - 15 minutes. Put all ingredients together in large pot or slow cooker, cover and cook on simmer for 3 -4 hours stirring occasionally. Season with salt and freshly ground pepper.
