- 1 c long grain white rice
- 4 oz Spanish chorizo (sliced)
- 1.5 c shredded roasted turkey
- 1 c frozen peas
- 1/4 c dry white wine
- 4 scallions, thinly sliced
- 2 plum tomatoes, chopped

Step 1
1. Cook the rice
2. Meanwhile, brown chorizo in a lg skillet.
3. Add turkey, peas, and wine.
4. Simmer until heated through.
5. Stir in rice, scallions & tomatoes.
