Ingredients
- 1 lb. beef tenderloin
- salt and pepper to season
- 2 tsp. herbs de provence
- olive oil
- 1 lb. spaghetti
- 15oz can diced tomatos
- 2 C. fresh basil
- 1 garlic clove, minced
- 1 tsp. lemon zest
- 2 tsp. lemon juice
- 1/4 C. olive oil
- 3/4 C. smoked almonds

Step 1
1) season beef with salt, pepper and herbs de provence on both sides. drizzle with olive oil. roast 10-12 minutes. rest on cutting board 10 minutes
2) meanwhile, cook pasta. combine tomatoes,basil, garlic, lemon zest, lemon juice and olive oil; process til coarsly chopped.
3) drain pasta, reserve 1 C. of the water. put pasta i bowl and toss with tomato mix and 3/4 C. smoked almonds, toss. ad reserved water if needed. season with salt and pepper
4) slice steak to 1/4" thick and toss into pasta
5)* i garnish with parmesan cheese and basil
