Ingredients
- 2 tsp. extra-virgin olive oil
- 2 carrots, chopped
- 2 stalk celery, chopped
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 tbsp. chopped fresh thyme
- 6 cups low-sodium, low-fat chicken stock
- 3 boneless, skinless chicken breasts, diced
- 1 cup frozen peas
- 3/4 cup small pasta (ditali or tubetti)
- 1/4 cup chopped fresh parsley
- 1/4 tsp. each salt and pepper

Preparation
Step 1
In large soup pot, heat oil over med-high heat. Add carrots, celery, garlic, onion and thyme and cook 10 mins. until slightly softened. Pour in stock and bring to a boil. Reduce to simmer and add chicken, peas and pasta. Simmer 15 mins. until chicken is cooked and pasta is al dente. Stir in parsley, salt and pepper.
