Ingredients

  • 1 (16 oz.) package orzo
  • 14 dried tomatoes
  • 10 pitted ripe olives, sliced
  • 1/2 cup canned quartered artichoke hearts
  • 1 celery stalk, sliced
  • 1/3 cup roasted sweet red pepper, chopped
  • 2 T fresh basil, chopped
  • 2 T fresh Italian parsley, chopped'3 T lemon juice
  • 3 T balsamic vinegar
  • 3 T olive oil
  • 1/4 t salt
  • 1/8 t peper

Preparation

Step 1

Cook pasta according to package directions; drain. While pasta cooks, soak dried tomatoes in warm water to cover; let stand 10 minutes. Drain and chop.
Combine pasta, chopped tomato, olives and remaining ingredients in a large bowl, tossing to coat.
