Ingredients
- 1 (16 oz.) package orzo
- 14 dried tomatoes
- 10 pitted ripe olives, sliced
- 1/2 cup canned quartered artichoke hearts
- 1 celery stalk, sliced
- 1/3 cup roasted sweet red pepper, chopped
- 2 T fresh basil, chopped
- 2 T fresh Italian parsley, chopped'3 T lemon juice
- 3 T balsamic vinegar
- 3 T olive oil
- 1/4 t salt
- 1/8 t peper

Preparation
Step 1
Cook pasta according to package directions; drain. While pasta cooks, soak dried tomatoes in warm water to cover; let stand 10 minutes. Drain and chop.
Combine pasta, chopped tomato, olives and remaining ingredients in a large bowl, tossing to coat.
