Grilled Chicken and Asparagus Salad

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 t. garlic powder
  • 1 t. salt
  • 1 t. pepper
  • 2 t. smoked paprika.
  • 1 1/2 cups spinach
  • 1 1/2 cups baby greens (or whatever lettuce you prefer)
  • 1 roma tomato, sliced
  • 5 to 8 spears of grilled asparagus
  • Dressing of your choice

Preparation

Step 1

Grill two boneless, skinless chicken breasts seasoned with garlic powder, salt, pepper, and smoked paprika. Slice and place on a bed of spinach and baby greens (or whatever lettuce you prefer). Slice a roma tomato and put half on each salad. Grill asparagus spears drizzled with a little olive oil and seasoned with salt and pepper (you can put them on the grill or under the broiler). Add them to the salad. Top with your favorite dressing.
