Beef Santa Fe Enchiladas

Ingredients

  • 1 1/2 lb. ground beef
  • 1 med. onion, chopped
  • 1 can (12 oz.) tomato paste
  • 1 c. water
  • 1 env. taco seasoning
  • 10 flour (6") tortillas - warmed
  • 1 jar processed cheese sauce
  • 1 can (4 oz.) chopped green chilies

Preparation

Step 1

Crumble beef into a large microwave safe bowl; stir in onion.
Cover and microwave on high 3-5 minutes or until meat is no longer pink; stirring every minute; drain. Stir in tomato paste, water & taco seasoning.
Cover & cook on high 1-2 minutes or until heated thru, stirring once.
Spoon about 1/3 c. down center of each tortilla; roll up
tightly.
Place seam side down in greased shallow 2 1/2 qt. micro-safe dish.
Set remaining meat aside.
Combine cheese sauce ;and chilies. Civer and microwave on high 40 aeconds. Pour over tortillas.
Spoon remaining meat sauce down center of tortillas.
Cover and cook on high 3-3/1/2 minutes or until heated thru. Let stand 5 minutes.
