tortellini and bean soup

  • 3 Tbs EVOO
  • 1 med onion, chopped
  • 1 clove garlic, crushed
  • 1 Cup chopped tomatoes, drained
  • 8 Cups Chicken broth
  • 1 Tsp dried oregano
  • 1 Tsp dried basil
  • 3 cans black beans, drained
  • 2 Tbs rice vinegar
  • black pepper to taste
  • 12 oz fresh or frozen tortellini


Servings 8


Step 1

In large pot, heat oil over medium heat. Add onion and saute for 3 minutes. Add garlic and tomatoes. Cook for 3 min. Add chicken broth, oregano, basil, beans, vinegar, and pepper. Reduce the heat to simmer for 5 min. Add pasta cook for 8 min or until tender.
