Famous Barr's French Onion Soup

Ingredients
- 3 pounds peeled onions (5 pound bag of onions peeled = 3 pounds)
- 4 ounces butter
- 1 1/2 teaspoon freshly ground pepper
- 2 tablespoons paprika
- 1 bay leaf
- 3/4 cup flour
- 3 quarts beef bouillon
- 1 cup white wine (optional)
- 2 teaspoon salt

Preparation
Step 1
Slice onions 1/8 inch thick
melt butter, place onions in it, sauté slowly for 1 1/2 hours in a large soup pot
add all other ingredients except bouillon, sauté over low heat 10 minutes more
add bouillon and simmer 2 hours
adjust color to a rich brown with kitchen bouquet
season with salt and pepper to taste and put in refrigerator over night
To serve, heat soup. Fill fireproof bowls with 8 ounces soup, top with 3 1 1/2 inch slices of French bread and top with 1 1/2 ounces imported swiss cheese, place under broiler until brown, approximately 5 minutes at 550 degrees.
