Ingredients
- 1 ½ c whole wheat pastry flour
- ¾ c flax seed meal
- ¾ c oat bran
- ½ c honey
- 2 TB molasses
- 2 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 2 tsp cinnamon
- 1 ½ c grated carrots
- 3 apples peeled and grated
- 1 ½ c raisins, fresh blueberries, or craisins
- 1 c chopped walnuts, pecans, or almonds
- ½ c buttermilk
- 2 eggs beaten
- 1 tsp vanilla

Preparation
Step 1
Mix all dry ingredients together and set aside. Mix all wet ingredients. Combine together. Spray muffin tin with nonstick cooking spray; do not use muffin papers. Bake 20 minutes at 350. Keep refrigerated; they will keep for two weeks.
