  • 6 medium cooking apples, peeled, cored and sliced
  • 1/2 cup raisins
  • 1/3 cup sugar
  • 1 tbsp lemon juice
  • 1/2 cup soft margarine
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup Alpen cereal
  • 1/2 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda

Step 1

Combine apples, raisins, 1/3 cup sugar and lemon juice in shallow 2 qt baking dish. Cream margarine and 1/2 cup sugar until light and fluffy. Beat in eggs, one at a time. Combine cereal, flour, baking powder and baking soda; stir into creamed mixture. Spread evenly over apples. Bake at 350, 35 - 40 minutes or until wooden pick inserted in centre comes out clean and apples are tender. Sprinkle with 1 tsp sugar, if desired. Serve warm with ice cream.
