Chicken breast stuffed with spinach and goat cheese

  • 4 t olive oil
  • 2 garlic cloves
  • 1/2 lb spinach
  • 4 chicken breasts
  • 4 oz goat cheese



Step 1

Heat oven to 400. Heat 2 t of oil in skillet. Add garlic and cook for 30 sec. Stir in spinach and cook, stirring constantly until wilted, about 2 mins. Season well with S&P. Cut pocket in each chicken breast. Open each pocket, sprinkle with S&P, fill evenly with goat cheese and spinach. Seal with toothpicks and season outside with S&P. Heat remaining oil in skillet and add chicken, cook until well browned on both sides, about 3 mins. a side. Transfer skillet to oven and bake until juices run clear, about 8 mins.
