Grilled Oysters with Garlic-Chipolte Sauce
- 1/3 cup chili sauce
- 1 tbsp. ketchup
- 1 tsp. finely chopped chipolte chili in adobo sauce
- 1 tsp. lemon juice
- 1 clove garlic, minced
- 2 lb. fresh oysters in shell, washed & scrubbed

Cooking time 13mins
Blend all ingredients exept for oysters in small bowl; add salt and pepper to taste. Cover and refrigerate for at least 1 hour.
Preheat grill to high. Make sure oysters are tighly closed. Place oysters directly on grill with deeper shell down to hold the juices, cover and grill until oysters opo open, 5 to 7 minutes. Discard any oysers that do not open. Take care not to overcook after shells open as oysters will dry out.
Top oysters with 1/2 tablespoon of sauce and serve immediately
