Ingredients

  • 8 potatoes

  • Sauce:

  • 1 - 8 oz. sour cream

  • 2 finely chopped onions

  • 1 cup fresh chopped parsley

  • 1/2 t. salt

  • 2 t. horseradish

  • 1 1/2 cup mayonnaise

Directions

Peel then slice potatoes into thin (1/4") slices. Boil; be careful to not over or under cook. Drain well and work quickly. Mix sauce together and then place 1/2 of te potatoes in a 9 x 12, 2-3 quart casserole, followed by sauce then more potatoes and top with remaining sauce. Make at least one day ahead.
