Big Apple Pancake

Yum! Apple pancakes are a perfect weekend breakfast. Serve with some bacon or sausage.
Ingredients
- 1/2 stick plus 2 tablespoons butter
- 3 large sweet apple such as Gala or Golden Delicious, peeled, cored, and cut into 1/4-inch-wide wedges (Also works great with 3 pears!)
- 1/2 cup milk, whole or skim or even canned
- 1/2 cup all-purpose flour
- 4 large eggs, room temp if possible.
- 3 tablespoons granulated sugar
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt, optional
- 1/2 teaspoon cinnamon
- Confectioners sugar for dusting
- Special equipment: a well-seasoned 10- to 11-inch heavy cast-iron skillet or other ovenproof skillet

Step 1
Put oven rack in middle position and preheat oven to 450°F.
Melt the 2 tablespoons of butter in the microwave for about 20 seconds - it's ok if not all has melted. But it should have a little time to cool to room temp.
Melt 1/2 stick butter in skillet over moderate heat. While butter is melting, peel and core the apples or pears.
Add apple or pear wedges to skillet and cook, turning over once, until beginning to soften, 3 to 5 minutes. Sprinkle cinnamon over the top - don't stir after adding it.
While apple is cooking, put milk, eggs, butter from the microwave , and vanilla into the blender. Mix until smooth. While blending the liquid, add flour, grandulated sugar, and salt to the blender. [Doing it this way prevents flour from sticking to the blender walls and ensures a great blend.]
Pour batter over apple and transfer skillet to oven. Bake until pancake is puffed and golden, about 15 minutes. Dust with confectioners sugar and display! Serve away.
