Lobster Roll

Simple is best for a classic New England lobster roll. It is traditionally served in a hotdog bun but it would also be nice to top a salad for a light meal.

Ingredients

  • 4 cups cooked lobster meat, cut into bite sized pieces
  • 1/2 cup low-fat mayonaise
  • 1 Tbsp. fresh lemon juice
  • 1/2 tsp. salt
  • pepper, to taste

Step 1

Salt and pepper the lobster meat. Combine the mayo and lemon juice in a separate bowl. Mix thoroughly with lobster. Refrigerate until ready to serve. Can also be made with chopped celery or green onions, for a little added crunch.
