apricot glazed chicken

- 1/2 cup finely diced shallots
- 1/4 cup finely chopped peeld ginger
- 2 tbsp. evoo
- 1/2 cup red wine vinegar
- 2/3 cup soy sauce
- 1 cup apricot preserves
- 4 1/2 lbs cut up chicken

Preparation
Step 1
cok shallots and ginger in oil in a small saucepan over medium heat\, stirring occasionally, until softened and golden, about 5 minutes
puree the sauce in a blender until smooth-use caution hen blending, then cool to room temperature.
divide the chicken between 2 large sealable bags and pour marinade over chicken. seal bags, pressing out excess air, and marinte, cjilled, turning bag over occasionally, at least 8 hours
preheat oven to 425. with rack in the middle.
line a 17 by 12 inch heavy baking pan with 2 overlapping sheets of foil then lightly oil the foil. arrange the chicken with marinade in 1 layer in pan. roast chicken, turning once until deep brown, cooked through and glazed, about 40 minutes
