Meatloaf in Potato Crust

Ingredients
- 1 onion, chopped, sauteed
- 1 lb ground beef
- 1/2 c bread crumbs
- 1 egg
- 1 red pepper, diced
- 1 T dark spicy mustard
- 1 T ketchup
- 1 t salt
- 1/2 t black pepper
- 1 potato, cut into cubes, boiled 10 min.
- 1/4 c milk
- 1 garlic clove, minced

Preparation
Step 1
1) Combine all ingredients (except potatoes, milk, and garlic) and bake in a 9 x 4 in. loaf pan for 45 min. at 400 degrees.
2) Simmer milk, garlic, and salt. Add potatoes after draining. Mash. Spread over loaf and bake 10-15 min. followed by 1 min. broiling.
