Caramel Apple Cheese Ball
- 8 ounces cream cheese (1/2 large container)
- 1/2 cup brown sugar
- 1 tablespoon white sugar
- 1 teaspoon vanilla
- 1 cup dry roasted peanuts -- chopped, more for rolling
- 1/2 cup powdered sugar, more as needed
- 1/3 cup apple juice
- 1 cup caramel sauce

Soften cream cheese.
Mix in sugars and add vanilla.
Add nuts. Add powdered sugar; more may be needed, depending on thickness.
Cover with plastic wrap and refrigerate until firm enough to shape.
Keep in mind this is very soft but the end result is fabulous.
After refrigerated roll into two balls. Roll balls in additional chopped peanuts then drizzle with caramel sauce.
Serve with apple slices, vanilla wafers and graham crackers.
