Artichoke Quiche

Ingredients

  • Prepared pastry for 9 in pie shell
  • 2 tbsp butter
  • 1 garlic clove, minced
  • 3 scallions, chopped
  • 1- 6 oz jar marinated artichoke hearts
  • (drained and coursely chopped)
  • 2 c shredded Gruyere or Fontina cheese
  • 1 1/4 c half-n-half
  • 4 eggs, beaten
  • salt and pepper

Preparation

Step 1

Preheat oven to 400 degrees.

Roll out pastry shell and line a 9 in pie pan.
Bake 10 mins

Reduce temp to 375 degrees.
In a large skillet, melt butter over medium heat. Add scallions and garlic and cook until soft. About 3-5 mins.

Add artichokes. Cook 1 min: spread on the bottom of the pie shell.
Sprinkle with cheese.

In a medium bowl, beat together eggs, cream salt and pepper.
Pour over scallion cheese mixture.
Bake 35 mins until golden and slightly puffy. Let stand 10 mins before cutting. 2 quiches 40- 45 mins.

For Broccoli quiche, use sharp cheddar and 1 c cooked broccoli.
