Paprika Corn and Chicken Rice

Ingredients

  • 5 cups of long grain rice cooked in the rice cooker with water as per manufacturers instructions including the following ingredients:
  • 1 Tbp Adobo
  • 1/2 tsp of Bijol
  • 1 tsp of tomato paste
  • 1 packet of sazon
  • 2 tbp of sofrito
  • 2 -3 tbp of canola oil
  • 3 lbs of chicken breast cut into one inch cubes.
  • 2 tsps of chopped garlic
  • 2-3 tsps of paprika
  • 1/2 tsp of oregano
  • 1/2 tsp of italian spice
  • 1/2 bijol
  • 1 packet of sazon
  • 1/4 cup of olive oil
  • 1 can or frozen packet of corn

Preparation

Step 1

Cook rice with added spices oil and water according to manufacturers instructions.

Meanwhile put chicken breast cubes, spices and oil in a frying pan and sauté until all juice is gone and only oil and chicken with thicken spices are left. Shut off stove when done.

When rice is done add chicken, drained can of corn to rice mix, cover and cook on low for additional 10 - 15 minutes. Serve hot! Enjoy!
