Ingredients

  • 3 1/3 cups firmly packed brown sugar, divided
  • 2 1/2 cups warm milk (105-110 degrees)
  • 3 (1/4oz) packages active dry yeast
  • 4 cups all purpose flour
  • 4 cups bread flour
  • 1 teaspoons alt
  • 3 tablespoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1 1/2 cups butter, softened and divided
  • 2 cups very finely chopped Braeburn apple
  • 3/4 cup finely chopped pecans

Preparation

Step 1

1. In the bowl of a heavy duty stand mixer, combine 1/3 cup brown sugar, milk, and yeast. Let stand for 5 minutes or until foamy. Add flours and salt. Using the dough hook attachment, beat at low speed for 7 minutes or until dough is smooth and elastic.

2. In a medium bowl, stir together cinnamon, allspice, and remaining 3 cups brown sugar; set aside.

3. Place dough in a large, lightly greased bowl, turning to grease top; cover bowl with plastic wrap. Let rise in a warm place, free from drafts, for 35 to 45 minutes or until doubled in size.

4. Turn dough out onto a lightly floured surface, and cut into 6 equal portions. Roll out 1 portion of dough into a 7x12 inch rectangle, keeping remaining dough covered with a damp towel. Spread 3 tablespoons butter over rectangle, and sprinkle with 1/3 cup loosely packed brown sugar mixture, 1/3 cup chopped apple, and 2 tablespoons pecans. Starting at a long side, roll up dough, jelly roll fashion, and pinch seam to seal. cut crosswise into 8 pieces. Repeat procedure with remaining dough portions.

5. Sprinkle 1/3 cup loosely packed brown sugar mixture tin each of 6 disposable pie pans. Place 8 rolls, cut side down, in each prepared pan. Dot roll tops with remaining 6 tablespoons butter; sprinkle with remaining sugar mixture.

6. Cover rolls, and let rise in a warm place for 30 minutes or until puffy.

7. Preheat oven to 325. Uncover rolls, and bake for 30 minutes or until golden brown. turn out rolls onto a serving platter; serve immediately.
