Marinated Pork Roast

Ingredients

  • pork loin 4-5 pound roast, rolled and boneless
  • coca-cola 1/2 cup
  • garlic 2 cloves minced
  • ginger 1 teaspoon
  • thyme 1 teaspoon crushed

Preparation

Step 1

Combine all the ingredients except the meat to form a marinate
Place the meat in a large zip-lock plastic bag, which has been set into a deep bowl to steady the meat
Add the marinate and seal the bag
Let stand at room temperature for at least 2 hours, or overnight in the refrigerator
Occasionally pat the bag to help spread the marinate evenly

Preheat the oven to 325°
Remove the meat and place roast on a rack in a shallow roasting pan.
Do not discard the marinate
Roast for 2 1/2 to 3 hours, or until a meat thermometer registers 175°
Baste occasionally with the marinate during the last hour of roasting
