Ingredients

  • 4 oz. butter, softened, plus extra for greasing
  • 1-1/4 cup all-purpose flour
  • 1 tsp. baking soda
  • pinch of salt
  • 1 tsp. ground cinnamon
  • 1 scant cup golden superfine sugar
  • 2 large ripe bananas, mashed
  • 2 eggs beaten
  • 5 tbs. boiling water
  • 1 cup semisweet chocolate chips

Step 1

Pre-heat the oven to 325 degrees. Grease and line the bottom and sides of a loaf pan. Sift the flour, baking soda, salt, and cinnamon into a bowl and set aside. Place the butter and sugar in a bowl and beat together until light and fluffy.

Beat in the bananas and then the eggs. The mixture may look curdled, bu this is perfectly normal. Stir in the flour mixture alternately with the boiling water until just combined, then stir in the chocolate chips.

Spoon into the prepared pan and smooth the tip. Bake in the pre-heated oven for 1 hour 10 minutes, or until well risen, golden brown, and fir to the touch. Let cool in the pan for 30 minutes, the turn out and peel off the lining paper. Transfer to a wire rack to cool completely.
