- 3 1/2 lbs medium sized red potatoes - cut in half
- 1 medium sized onion, finely chopped
- 2 teaspoons olive or salad oil
- 2 teaspoons salt
- 2 teaspoons dried rosemary leaves, crushed
- 1/4 teaspoon coarsely ground black pepper

Step 1
Preheat oven 400 degrees. In 17x11 1/2 roasting pan, toss potatoes and onion with olive oil, salt, dried rosemary and pepper until well coated.
Roast potatoes 40-45 minutes, turning them occasionally, until potatoes are tender and golden
