Ingredients

  • 3½ lbs medium sized red potatoes - cut in half

  • 1 medium sized onion, finely chopped

  • 2 teaspoons olive or salad oil

  • 2 teaspoons salt

  • 2 teaspoons dried rosemary leaves, crushed

  • ¼ teaspoon coarsely ground black pepper

Directions

Preheat oven 400 degrees. In 17x11 1/2 roasting pan, toss potatoes and onion with olive oil, salt, dried rosemary and pepper until well coated. Roast potatoes 40-45 minutes, turning them occasionally, until potatoes are tender and golden
