Ingredients

  • FROSTING:
  • 4 eggs
  • 2 C. sugar
  • 1 1/2 C. veg. oil
  • 2 C. flour
  • 2 to 3 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 2 C. grated carrots
  • 1/2 C. butter, softened
  • 1 3 oz. pkg. softened creamed cheese
  • 3 3/4 C. confectioners' sugar
  • 1 tsp. vanilla ext.
  • 2 to 3 Tbsp. milk
  • 1 C. chopped walnuts
  • Carrot curls & additional walnuts, optional

Step 1

In a mixing bowl, combine eggs, sugar & oil. Mix well. In a separate bowl, combine flour, cinnamon, baking powder, baking soda, salt & nutmeg; beat into egg mixture. Stir in carrots.
Pour into 2 greased and floured 9 in. round baking pans. Bake at 350 for 35-40 min. or until toothpick comes out clean. Cool for 10 min. Remove from pans to wire rack.
For frosting, in mixing bowl, cream butter & cream cheese. Gradually beat in confectioners sugar & vanilla. Add enought milk to achieve desired spreading consistency. Stir in walnuts. Spread between layers, sides & top of cake. Garnish with carrot curls & walnuts, if desired.
