Ingredients
- 2 tablespoons olive oil
- 1 1/4 cups chopped onion
- 4 large cloves minced garlic
- 1 tablespoon fresh thyme or 1 1/2 teaspoon dried
- 3 15 ounce cans black beans
- 2 14 ounce cans chicken broth
- 1 28 ounce can diced tomatoes in juice
- 2 teaspoons cumin
- 1 1/2 teaspoons hot sauce

Step 1
Heat oil in large pot over medium heat. Add onion, garlic and thyme, saute until onion is golden, about 8 minutes. Add beans, broth, tomatoes, cumin and hot sauce. Bring to a boil. Reduce heat to medium low and simmer until flavors blend - 20 - 30 minutes. Let cool. Working in several batches, puree about 3/4 of soup in blender until smooth. Mix puree back into pot. Season with salt and pepper. Top with cilantro and sour cream to serve.
