Hearty Beef Vegetable Soup

Ingredients

  • flour 3 tablespoons
  • salt 1/2 teaspoon
  • pepper 1/4 teaspoon
  • beef stew meat 1 pound cut into 1/2-inch cubes
  • olive oil 2 tablespoons
  • tomatoes diced 1 (14 1/2-ounce) can italian
  • tomato sauce 1 (8-ounce) can
  • red wine vinegar 2 tablespoons
  • Worcestershire sauce 2 tablespoons
  • garlic 3 cloves minced
  • oregano 1 teaspoon dried
  • water 3 cups hot
  • potatoes 4 mediums peeled, and cubed
  • carrots 6 mediums sliced
  • turnips 2 mediums peeled, and cubed
  • zucchini 1 medium halved lengthwise and sliced
  • onion 1 medium chopped
  • green chilies 1 (4-ounce) can chopped
  • sugar 2 tablespoons

Preparation

Step 1

In a large resealable plastic bag, combine the flour, salt and pepper.
Add beef, a few pieces at a time, and shake to coat.
In a soup kettle or Dutch oven, brown beef in oil.
Stir in tomatoes, tomato sauce, vinegar, Worcestershire sauce, garlic and oregano.
Bring to a boil.
Reduce heat cover and simmer for 1 hour.
Stir in the remaining ingredients.
Bring to a boil.
Reduce heat cover and simmer for 1 hour or until meat and vegetables are tender.
