Hot & Sour Chicken Soup (or shrimp

Ingredients

  • 8 cups chicken stock
  • 2 boneless skinless chicken breast, cut into strips ( I use raw shrimp ,shell off and add wontons both at the last)
  • 6 white mushrooms, sliced thin
  • 1 tomato, finely diced
  • 2 medium carrots, sliced thin
  • 1 tbsp sugar ( I use sweet chili sauce instead, near the end and put lots.. to your own taste)
  • 1 tbsp soy sauce
  • 3 tbsp redwine vinegar ( never bother)
  • 1 tbsp sesame oil ( I put more, to your own taste)
  • 3 tbsp cornstarch
  • 3 green onions , thinly sliced
  • 1/4 cup fresh coriander, chopped
  • (I add snow peas, bean sprouts, water chestnut, and bamboo shoots, and baby corn, baby bok chow )

Preparation

Step 1

In a large saucepan, over med/high heat,bring chicken broth to a boil, add chicken strips and return to a boil. (if using shrimp or wontons ,add at the end)
Return heat to med and add and carrots and simmer 10 minutes.
Add sugar( sweet chili sauce, soy sauce and sesame oil. Bring to a boil once again and then reduce heat to low. Add all remaining veges
In a small bowl, combine cornstarch and cold water until well blended. Slowly add to the hot soup in a thin stream, stirring all the while. Allow to return to a boil for about 1 minute before adding green onions and tomatoes last..
