  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 cup date sugar
  • 1 cup unsweetened applesauce
  • 4 ripe bananas,mashed
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1 cup walnuts,chopped
  • MACADAMIA CREAM
  • 2 2/3 cups raw unsalted macadamia nuts
  • 1 3/4 cup soy milk(if you want a thinner consistencey,add more)
  • 1 1/3 cup pitted dates(preferably medjool)
  • TOPPINGS
  • 1 cup unsweetened coconut
  • 2 cups strawberries
  • 1 cup blueberries(optional)

Step 1

preheat oven to 350. Mix flour and baking soda in a medium bowl. In a large bowl,beat date sugar and applesauce together. Mash bananas and mix in. Add water and vanilla and mix well. Add flour mixture with the chopped nuts. Stir to mix. Put in a lined with parch. paper 9x13 pan. Bake 40-45 min or until toothpick comes out clean. While cake is baking,make cream by blending nuts,soy milk and dates together, In a high powered blender blend until smooth and creamy. When cake is cool spread cream,sprinkle with coconut. Garnish with fruits.
