Ingredients

  • 2 skinless boneless chicken breast
  • 1 cup diced tomatoes
  • 1 Tbsp. garlic
  • 1/4 cup chicken broth
  • 2 Tbsp. white wine
  • 1/2 tsp. oregano
  • 1/4 tsp. thyme
  • 1/4 tsp. rosemary
  • 1/4 tsp. pepper
  • 2 Tsbp. cream
  • 1 Tsbp. fresh basil

Preparation

Step 1

Place chicken breast in a ziplic bag.
Add the next 8 ingredients.Seal the bag. Mix the next 2 ingredients and place in a ziploc bag.Put both bags in a large freezer bag and freeze.
Thaw completely.Pat chicken breasts dry. Heat 1 Tbsp. oil in large frypan over medium heat.Sprinle breast with salt and pepper and saute until nicely browned and cooked through, about 5 to 7 minuted per side.Remove and tent with foil.
Pour tomato mixture into the frying pan and bring to a boil, stirring to scrape up any brown bits.Boil for approx.3 minutes. Reduce heat and stir in the cream/basil.Simmer for about 3 minutes. Return chicken to pan to warm.Spoon sauce over chicken and serve.
