Spicy Shrimp & Grits

Ingredients

  • 1 cup quick cooking grits
  • 2 T olive oil
  • 1/2 onion diced
  • 4 thin slices prosciutto cut into thin strips
  • 6 garlic cloves minced
  • 1 cup canned diced tomatoes with juice
  • 2 T dried oregano
  • 1 pound large shirmp
  • 2 cups loosely packed arugula

Step 1

Cook grits. Over medium heat cook olive oil, onion, prosciutto and garlic about 10 minutes. Add tomotoes, oregano and shirmp. Cook until shrimp are opaque - about 4 minutes. add arugula and cook 1 minute. Place grits on plates and top with shrimp misture. 4 servings.
