Berry Cheesecake

Your guests will love this swirly berry cheesecake and its classic graham cracker crust.
Ingredients
- 1 1/4 cups graham cracker crumbs
- 3 Tbsp sugar
- 1/3 cup melted, cooled butter
- 2 (10-oz) bags frozen, sweetened strawberries (thawed and drained)
- 1 Tbsp cornstarch
- 3 (8-oz) packages cream cheese
- 1 (14-oz) can sweetened condensed milk
- 3 Tbsp lemon juice
- 1 tsp vanilla
- 3 eggs
- Fresh berries for topping

Preparation
Step 1
Mix graham cracker crumbs, sugar, and butter. Press into bottom of a 9-inch springform pan. Refrigerate 20 minutes.
Preheat oven to 300 F.
Puree thawed and drained strawberries and cornstarch. Simmer until thick. Reserve 1/3 cup strawberry sauce and chill rest.
In a bowl, beat cream cheese. Add condensed milk, lemon juice, vanilla, and eggs, one at a time. Pour half the cream cheese batter over crust.
Dot batter with half the 1/3 cup reserved strawberry sauce. Top with remaining batter and dot with remaining 1/3 cup sauce. Run a knife through batter and sauce for swirls. Bake 45 minutes or until set. Cool on a rack 10 minutes.
Run a knife around edge to loosen. Refrigerate overnight. Unmold and top with fresh berries and remaining strawberry sauce.
