Ingredients

  • GARNISH:
  • 2 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 1 teaspoon garlic puree
  • 1 pound ground turkey
  • 1 (28 ounce) can tomatoes, diced
  • 1 sweet red pepper, diced
  • 1 430ml jar salsa (choose your spice)
  • 1 540 ml can six bean blend, rinsed and drained
  • 1 540 ml can white kedney beans, rinsed and drained
  • 1 can corn nibblets, drained or 1 1/2 cups frozen
  • 3 tablespoons tomato paste
  • 1 1/2 teaspoons chili powder, or to taste
  • 1 teaspoon cumin
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup sour cream
  • Nacho chips

Preparation

Step 1

Heat the oil in a medium skillet over medium to high heat. Add the onion and garlic puree stirring until slightly soft, about 4 minutes.

Add the turkey and cook until no traces of pink remains, crumble the turkey with the back of a spoon, about 7 minutes.

Add the tomato in with the juice, beans, salsa, peppers, tomato paste and spices, bring to boil.

Reduce heat and simmer for about 15 minutes, taste add salt and more spiced if needed stir and enjoy.

Serve with the cheese, sour cream and nachos on the side.
