Oven Chips with Pulled Pork and Slaw

Ingredients

  • Pulled pork:
  • 1 rack store bought cooked baby-back ribs
  • 12 ounces chili sauce
  • 1 tablespoon hot taco seasoning
  • Chips:
  • One bag frozen waffle cut fries
  • 1 (16 oz) container coleslaw
  • 1/2 cup finely diced cilantro leaves for garnish

Step 1

To make the pulled pork:
Pull the meat off of the bones with a pairing knife. Set aside. In a sauce pan on medium heat, combine the chili sauce and taco seasoning and bring to a boil. Reduce heat, add the pulled pork and cook until hot.

Pull out the largest, best shaped waffle cut french fries and bake according to package directions in a single layer on a cookie sheet. Make them crisp.

When they are done top them with hot pork, cold drained coleslaw and a little cilantro.
