Sweet Potatoe Casserole Surprise

I got this recipe from a cookbook I found in a Bed and Breakfast in Kentucky. We were doing the Bourbon Trail and was a Makers Mark recipe. "The best casserole ever".

Ingredients

• Topping:
• 6 med. sweet potatoes (4 lbs.)
• 1/2 cup butter
• 1/2 cup firmly packed brown sugar
• 1/3 cup orange juice
• 1/4 cup bourbon
• 1/2 tsp. salt
• 1/2 tsp. pumpkin pie spice
• 1/2 cup flour
• 1 cup brown sugar
• 1/2 stick butter
• 1 cup chopped pecans

Preparation

Step 1

Cook potatoes in boiling water for 20-30 min. or until tender. Drain and let cool to touch.

Peel potatoes and mash.

Combine potatoes and next 6 ing. mixing well. Spoon mixture into lightly greased 1 1/2 qt. baking dish.

Mix together topping ingredients and cover potatoe mixture.

Bake 375 for 40 min.
