Ingredients

  • 2/3 cup dried apricots chopped
  • 1/2 cup butter or margarine softened
  • 1/4 cup sugar
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup brown sugar
  • 2 eggs beaten
  • 1/2 tsp vanilla
  • 1/2 cup pecans, chopped
  • powdered sugar
  • 1/3 cup sifted flour

Preparation

Step 1

Rinse apricots with water.
Cover with water and boil for 10 min. Drain, cool and cut into small pieces.
Preheat oven to 350 degrees.
Grease an 8" X 8" pan.
Mix butter, sugar and 1 cup flour until crumbly.
Pack into pan.
Bake about 25 min or until lightly browned. (may be less time)
Sift together 1/3 cup flour, baking powder, and salt.
Gradually beat brown sugar into eggs.
Add sifted flour mixture mixing well.
Stir in vanilla, apricots and nuts.
Spread over baked layer.
Bake 30 min or until done.
Cool well in pan.
Dust with powdered sugar and cut into squares.
