No Bake Berry Pie

Ingredients
- 9 " baked pie crust
- 2 cups raspberries
- 2 cups blueberries
- OR: 1 bag frozen mixed berries, thawed
- 2/3-1 cup sugar
- 3 tablespoons cornstarch
- 1 cup water
- 1 tablespoon lemon juice
- 2 tablespoons butter
- Cool Whip (opt)

Preparation
Step 1
Bake and cool pie crust.
In saucepan, mix 2/3 cup sugar, cornstarch abd water till smooth. Cook over medium heat until thick and translucent, stirring frequently. Remove from heat, stir in lemon juice. Taste and correct balance of sugar and lemon juice. Add butter and berries. Put in bowl and chill 30 minutes. Spoon into crust and chill at least 3 hours. Top with Cool Whip, if desired.
