- 1 CUP RICE (uncooked), 1 CHOPPED ONION, 1 CHOPPED BELL PEPPER, 1 CUP CHOPPED CELERY, 1/2 CUP MELTED BUTTER, 1-2 JALAPENOS, SEEDED AND CHOPPED, 2 16OZ. CANS CREAMED STYLE CORN, 1 1/2 CUPS GRATED CHEDDAR CHEESE, 1 TABLESPOON SUGAR.

Step 1
COOK RICE, SET ASIDE. SAUTE ONIONS, BELL PEPPER AND CELERY IN MELTED BUTTER IN LARGE SKILLET UNTIL TENDER. COMBINE RICE AND SAUTED VEGS. IN LARGE BOWL, ADD JALAPENO PEPPERS, CORN, CHEESE AND SUGAR, STIR WELL. SPOON CORN MIXTURE INTO LIGHTLY GREASED 2 QUART CASSEROLE DISH. BAKE IN PREHEATED 350 DEGREE OVEN FOR 40-45 MINUTES OR UNTIL BUBBLY. MAKES 8-10 SERVINGS.
